“Here is a recipe I have had for 40 plus years; it was given to me by the wife of my husband Jimmy’s boom operator when ‘we’ were in the Air Force. I fixed it every time my parents visited. It was a favorite of my father. Daddy loved dessert but didn’t snack between meals and walked to/from work at Smith’s Shoe Store in downtown Winchester for many years.”
Here’s Mary Jane’s recipe.
Apple butter bread (cake)
1/2 cup shortening
1 cup sugar
4 eggs, well beaten
2 1/2 cups all-purpose flour
1 1/2 teaspoon soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1 cup buttermilk
1 cup apple butter
Preheat oven to 350 degrees. Grease a 5- by 9- by 4-inch loaf pan.
In a large mixing bowl, cream shortening. Add sugar gradually continuing to cream until fluffy. Add well-beaten eggs and mix thoroughly. Sift flour, measure and sift again with soda, salt and spices.
Add dry ingredients alternately with sour milk, beginning and ending with the dry ingredients.Add apple butter and blend well. Spoon into prepared pan and bake 45 to 50 minutes.
